The “tume” of Murazzano
Murazzano cheese is a soft cheese product made exclusively from the milk of Murazzano sheep. It has a cylindrical shape, with a diameter of about 10-15 centimeters and a weight ranging between 200 and 400 grams. The rind of the cheese is thin and soft, with a white or straw-colored hue. The interior is compact, creamy, and melts in the mouth, offering an intense and slightly spicy flavor.
The production of Murazzano cheese is an art that requires skill and patience. After the sheep are milked, the milk is processed using traditional methods. The curd is obtained using natural enzymes and is then pressed and salted. The cheeses are subsequently aged for a period of at least 60 days, during which they develop their distinctive aromas and acquire the desired texture.
Today, Murazzano cheese is recognized with the PDO (Protected Designation of Origin) label, which guarantees its authenticity and origin from the Langhe. It is a culinary treasure appreciated both locally and internationally and represents an excellence of Piedmont’s cheesemaking tradition.
